This fab recipe invention by the brilliant Jessica Simmons from Nourishing Jessica was one of our 5 winning entries, a clever, yet simple bowl of goodness!

I love this recipe because it is super simple. I was planning on making sushi but I didn't have any nori sheets in my house so I made the next best thing - a sushi bowl! - it is so tasty, so quick and packed with nutrients. The addition of the chlorella granules adds an extra dimension of crunch and also aids in cleansing the liver of toxins. The granules are fast becoming an everyday essential for me and they marry well with almost everything. I just love getting my crunch on!

Ingredients
- 1/2 cup rice
- 2 tsp Organic Burst Chlorella granules
- 1/2 red onion
- 1/5 cucumber
- 1/4 avocado
- 1/4 lettuce
- 1 tbsp crushed peanuts
- 1/2 lime
- Rinse and boil the rice in lightly salted water
- Whilst the rice is boiling prepare the vegetables by thinly slicing the cucumber into batons and thinly slicing the red onion and lettuce
- Cut chunks of avocado
- Crush the peanuts
- Once the rice is cooked, rinse, season and set aside
- Place the rice, cucumber, onion, lettuce and avocado in a bowl and then sprinkle with crushed peanuts, chlorella granules and a squeeze of lime juice
