Ingredients:
- 2 tbsp Organic Burst Chia
- 350g fresh cherry tomatoes, diced
- small handful fresh coriander
- 1/4 cup red onion, diced
- 1 tsp chopped garlic
- 1 jalapeño pepper (de-seeded and minced)
- 1/2 lime, juice + zest
- pinch sea salt (optional)
Method:
- Blitz all ingredients in a food processor until combined but still chunky.
- Season as desired
- Place in the fridge for 30 mins for chia seeds to absorb liquid.
- You're ready to serve!
